Fruit Cookies



This is the recipe that has been on my to-make list for a very long time. As the old saying goes, it’s better late than never, so yesterday, I finally made these yummy cookies.

These are sooooo good, buttery with the sweet and tangy bite from the dried fruit. I think I like them better than Karachi bakery fruit cookies.

Ingredients:

125 gm All purpose flour
90 gm Salted Butter, Softened
60 gm Icing Sugar
1/2 tsp baking powder
75 gm Tutti frutti and cashew nuts
1 tsp vanilla essence
1-2 tbsp Milk if Required


Method:

1. In a bowl, Add in the icing sugar and beat it until it is creamy, light and fluffy (around 6-7 minutes).




2. Add in the dry ingredients, (All purpose flour, Baking Soda and mix them gently then add  tutti frutti and cashewnuts, and vanilla Essence mix well)  to the wet ingredients and beat until it is just combined. Using your hands form a dough of it; it would be creamy and soft so will get assembled easily.






3. Place a cling wrap on your kitchen counter and transfer this dough onto it. Give it the shape of a wooden log. Wrap it up and freeze for 1 hour or until it is firm.




4. After it is firm, cut it out into 1 cm pieces, place it with enough gap between each of them on a baking tray and bake at preheated oven of 180 degree celsius for 15 minutes, turning the tray in between so that it bakes evenly from all sides.





Remove and let it cool completely. You can store them in container.!!
